A2 Cow Ghee is a traditional form of clarified butter made exclusively from the milk of indigenous Indian cow breeds (such as Gir, Sahiwal, and Red Sindhi). What sets it apart from regular commercial ghee comes down to two major factors: the type of protein in the milk and how the ghee is crafted.

1. What Makes A2 Milk Special?

Milk contains two main types of beta-casein proteins: A1 and A2.

  • A2 Milk: Produced naturally by native Indian cows. When digested, A2 protein breaks down smoothly without producing BCM-7 (beta-casomorphin-7), a peptide linked to stomach cramps, bloating, and inflammation.
  • A1 Milk: Found in hybrid or Western cow breeds (like Holstein Friesian or Jersey). It can be harder to digest for people sensitive to dairy.
  • Because A2 ghee is virtually free of milk solids, lactose, and A1 proteins, it is exceptionally gentle on the digestive tract.

2. The Traditional Bilona Method

Most modern ghee is made by skimming cream directly from milk using machines and heating it at high temperatures. In contrast, authentic A2 ghee relies on the Bilona method, a slower 5-step process that preserves delicate nutrients and antioxidants:

 

  1. Boiling Pure Milk: Fresh A2 milk from free-grazing cows is slowly boiled over a gentle flame.

  2. Curd Formation: The milk is set overnight with a natural starter culture to ferment into whole curd.

  3. Two-Way Churning (Bilona): The curd is churned back and forth using a wooden churner (bilona) to separate pure white butter (makhan) from buttermilk.

  4. Slow Heating: The white butter is melted on low heat until the water evaporates and golden, aromatic ghee separates.

  5. Straining & Storing: The ghee is strained and stored, leaving a rich, granular texture and distinct nutty flavor.
